An IHOP restaurant appears to be getting close to opening in the northern portion of the former Abuelo’s Mexican Restaurant building in Zona Rosa at I-29 and Barry Road. Plumbers were at work inside the building early this week and a sign on the door indicates the location is now hiring. The building is at 8545 NW Prairie View Road inside the Zona Rosa open air, mixed use shopping center. Abuelo’s closed during the pandemic and the building has been vacant since that time. The building permit on file with the City of Kansas City describes the work for IHOP as “construction of new addition and renovation,” with a listed total project cost of $323,000. IHOP is an acronym for International House of Pancakes, a restaurant chain that specializes in American breakfast foods.
