Originally planning for a September opening, corporate officials for LongHorn now say the planned opening at Tiffany Springs is a month later than initially hoped.

“We are currently targeting an October opening,” says Jessica Dinon, a media spokesperson for the LongHorn corporate offices, in response to a question from The Landmark.

LongHorn is remodeling the former Ruby Tuesday building at 9770 NW Prairie View Road, which is west of I-29 at the Tiffany Springs exit. The steakhouse location is listed as “LongHorn Steakhouse at Executive Hills North” in permit paperwork on file with the City of Kansas City.

The former Ruby Tuesday restaurant at Tiffany Springs closed many months ago after the pandemic hit.

LongHorn Steakhouse has a Western/Texan theme. Each restaurant is decorated with oil paintings, photos, and selected Western memorabilia that support the theme.

The restaurant is best known for serving various kinds of steak, including its “Flo’s Filet.”

In addition to steak, the menu also includes ribs, chicken, salmon, lobster, shrimp, and salads.

Appetizers include their “Texas Tonion” and “Wild West Shrimp,” and side dishes are also served.

LongHorn offers a full bar with draft and bottled beer, wine, and several signature margaritas. The lunch menu–which includes soups, salads, sandwiches and hamburgers–is available at most locations.

There are other locations in the Kansas City metro not far from Platte County, including at Liberty and at Legends in Kansas City, Kan., but this will be the first LongHorn in Platte County.

LongHorn Steakhouse was founded in 1981 and the franchise now has locations in the eastern United States as well as the Midwest and Southwest, as well as Puerto Rico.
